Fala, baixa o Chameleon Wizard http://www.osx86.net/downloads.php?do=file&id=2050, tem SMbios pronta, procure a Mac pro 3,1 e salve na pasta EXTRA.

Se você está usando Clover, essa configuração é feita no arquivo /EFI/config.plist
