Nah, that didn't work and crashed a couple times since with the same panic. At this point should I consider a mobo/ cpu upgrade to go with the Sapphire? What would you recommend a 370 or 390? Thanks for your help with this, much appreciated!

I'm currently using iMacPro 1,1. I tried MacPro 7,1 smbios yesterday and after that change it crashed overnight, and again while working today so I switched back to iMacPro 1,1.

Is there another graphics card that I should try? There are a few other brands available. What would be an alternative to the Sapphire Pulse RX 580? Thanks!

That worked! It hasn't crashed at all since installing the MSI Vega 56 8GB card on Friday. Performance is better too which is great! There were several of the Vega cards available used on kijiji for the same price I paid for the new RX 580 on Amazon. Thanks for your help MaLd0n, cheers!
