so, I used the vanilla Monterey image and the coffee lake EFI

I have a 

i9 9900

msi z390m motherboard

sapphire rx 6600 xt

I was able to get it installed and can boot to macOS desktop
the issue im having is that the wifi/bluetooth is not being detected so I have no interwebs and I aslo have no multi monitor.
I run a display port in a daisy chain configuration.

So after looking around last night. I don’t think my wifi/Bluetooth card in my msi z390m is compatible it’s an Intel® Wireless-AC 9560

I was also unable to get my 2nd monitor to show up. Even though both screens were mirrored. In macOS it would only show one on the display tab

 

I will try again using the new kexts. Ty

so great news.. bluetooth and wifi are now working.. 
im sure there are more issues I have yet to discover. but I think the most pressing issue is to be able to extend my monitors. currently both are driving off of a single DisplayPort using a daisy chain configuration and I can see the same screen mirrored on both monitors. however when I look at the displays window in system preferences only one shows up.

so doing a bit of research online I've read conflicting threads about if MST/daisy chained monitors via display port actually work in Mac OS. can anyone confirm if it's supported? if not I can always run another DP cable and get the other monitor working. but the setup would be a lot cleaner with one cable.

so I ended up just running another dp cable.. I suppose the last thing to do is to tweak the system and remove unused kexts etc.. and remap the usb. can anyone point me to a decent guide / video on how to remap usb and remove unused kexts and clean up my EFI so that it only has entries pertaining to my system.

usb mapped successfully. doing this actually resolved a few issues I was experiencing; like mouse stuttering. obviously USB ports not working. and a more stable bluetooth/wifi.. 

I guess my next question is how do I fine tune the system now and remove unecesarry kexts / ssdts etc..

could you explain a bit why MacPro1,1 is better and what do you mean by hardware acceleration, also what changes did you do please.

 

also I ran this through OCAuxTools and got the following. 

OCS: No schema for EnableForAll at 0 index, context <Quirks>!
OCS: No schema for EnableForAll at 6 index, context <Quirks>!
OCS: No schema for ForceAquantiaEthernet at 10 index, context <Quirks>!
OCS: No schema for SkipCustomEntryCheck at 11 index, context <Boot>!
OCS: No schema for LogModules at 5 index, context <Debug>! Serialisation returns 5 errors! Completed validating /Users/*******/Downloads/EFI/OC/config.plist in 0 ms. Found 5 issues requiring attention.

I can confirm. everything is working as it was before. I haven't noticed anything different between IMacPro19,1 vs MacPro1,1 I did noticed Traktor 3, Machine 2, Mashup, Mixed In Key "appeared" to load the audio spectrum a bit faster. but that could be placebo. I do get a bit of stuttering from time to time with my Bluetooth. but it's not a game breaker. it's very infrequent

if u used iMac19 smbios u need enable Internal Graphics for intel quick sync, with iMacPro1,1 or MacPro7,1 smbios u dont need enable IGPU

fair enough. I don't use sidecar on my desktop so I'm not missing out on anything anyways. I appreciate all of your help.
I'm really impressed with how the system runs. I've been running gnome on multiple distros for years and I feel right at home on this hackintosh.
