Hello guys! 
I have 2 setups:

--- Desktop: 

AMD Ryzen 7 3700x 

32GB DDR4 3200mhz

GTX 970 4GB 

MB Chipset b450

--- Laptop:

DELL G15

Intel Core i5 10th gen

8GB DDR4 2933mhz

GTX 1650 4GB

WiFi: Dell Wireless Killer Wi-Fi 6 AX1650 (2x2) + Bluetooth 5.0

 

I know the laptop has some incompatibility issues but between the 2 which would be better?

I accept MacOS version suggestion too

Right. But among these 2 that I mentioned that is what I have at the moment, which would give me less trouble?

I see that the GTX 970 is accepted by hackintosh but it has a ryzen processor.

And the laptop with Intel I'll have to disable the video card.

It really depends on your needs and preferences. If you need portability, the laptop might be a better choice for you. The laptop's graphics card is more powerful than the desktop's, which would be beneficial for video editing. The desktop might be better if you want more power and RAM for more intensive tasks.
