Apart from the kexts in your 'EFI OpenCore Chipset Series' archive, I currently also have those installed (per your advice):

 

AMDRadeonPro, AppleIntelE1000e, EFICheckDisabler, EFICheckDisabler, FakeSMC, NoVPAJpeg.

 

Should I keep and update them, or are they no longer necessary for my build?

try with full efi folder first, if dont work check others

Hey there!

did you manage to use open core on X79? as far as i can see there are no X79 OC EFI folder to download from olarila. If Mald0n didn't make it ... it could be a dead case?

Hi Maldon, it´s my first time posting a comment: 
I´ve been striving to jump to OpenCore, last night I placed the EFI folder for X299 that you mentioned and it works.
But after booting in the "welcome" screen of macOS Mojave, it´s not working the USB, neither the mouse, neither the keyboard.
This is my gear:
- CPU Core i7 3930K 6 cores
- MB Gigabyte X79 UP5 Wifi (I´m not using the extra cards for Wifi and Bluetooth)
- GPU Radeon Amd RX580 Sapphire Pulse 8GB 
- RAM 32GB
 By the way, the other that I´m facing is this: 
Using the RX580, it´s woking just 2 monitors, connecting a third monitor, there´s a black screen in the 3rd and having glitches in the first 2.
Recently, I could get a second RX580, I was worried if the the first RX580 was broken or damaged, so
I installed both cards, and the second RX580 made to work both in this way:
the card in the slot 1: still working just 2 monitors, slot 2: working good the 5 ports for the monitors.
But just using 1, I have that issues. 

Any recomendation it will be appreciated. Thank you.

Thank you for your fast response. I appreciate it. 
To rename EH01 and EH02, do I take the data from my DSDT Patch in Clover?
in that config.plist appears the info to Find and Replace for: 
- XHC1 to XHC (58484331 to 5848435F )
- EHC1 to EH01 (45484331  to 45483031 )
- EHC2 to EH02 (45484332 to 45483032 )
- EUSB to EH01 (45555342 to 45483031 )
- USBE to EH02 (55534245 to 45483032 ) 

Now, I understand that every config.plist it´s so different the structure (between Clover and OC)

Is this information correct to be added to OC Config.plist? or where or how could I get the Find and Replace for the USB Devices to EH01 and EH02?

Hi Maldon! 
I tried those, and initially, didn´t work but I realized the folder it was for iMacPro1,1, so I changed to MacPro6,1 that usually I use in Clover...and.....Voilá! 
I could get in! USB Working!! 
Now, 2 more issues that I´m reading to resolve: 
1) No network. Appears like there´s no ethernet. (I´m using Intel Mausi and Realtek8111 my MB has 2 ethernet, and usually works with those 2, I removed the other kexts related to ethernet.
2) I tried to use just 1 RX580, and the same issue: just 2 screens working, as soon as I connect a 3rd display, starts to have glitches, and a black screen the 3rd.
