Full recap of the troubles I've had and how they were fixed, so that they may help other people in the future:

[ Hardware configuration ]

Asus Maximus Gene VIII
Intel i7 6700k
Nvidia GTX 980ti

[ Install process ]

Starting from the High Sierra image download and booting it, encountered the following issues:

[ long boot time ] AppleACPICPU kextd stalls (up to ~16 minutes) but eventually gets into the installer. The solution is download the appropriate clover folders for the z170 chipset (https://www.olarila.com/files/Clover.Folder/CLOVER.SERIES.100.200.300.zip). These contain the correct kexts, ssdt and dsdt for the system to at least boot up, replace the entire contents of the EFI partition with these (I used diskpart to mount it and explorer++ on windows make these changes to the EFI partition in the usb disk).
[ no ethernet ] Once you've installed the system and booted from the hard drive with the usb loader the network driver is not working. The solution is to keep the IntelMausi.kext from the install image clover folder, the IntelMausiEthernet.kext from the above zip file somehow does not work with the chip in our motherboard.
[ no EFI partition on the install hard drive ] The pictures in the install guide were clear, but I missed this, if you don't have the option to choose "APFS" and "GUID" in disk utility you need to toggle the "show all .." option. If you install using the "Apple extended (journaled)" filesystem you will be doing an MBR install that cannot support UEFI. Don't be like me and read the guide properly
[ nvidia drivers not working ] Use the "Webdriver All Versions" application to install the nvidia drivers (they need to be patched because they refuse to install unless you have a specific version of the operating system installed, which you won't) and get the latest version available. Once they are installed you'll see the Nvidia logo in the menu bar. After a reboot click the icon and select "NVIDIA Web Driver" instead of the Default mac os driver. Another reboot and you should be good to go.

Overall this was a relatively painless experience and everything works! Hope these few extra info can help others save some time :)

OS: Catalina 10.15.3

CPU: Core i5-6400

RAM: 16GB DDR4 Kingston @2133Mhz

MB: Gigabyte H110M DS2

GPU: Radeon RX480

SSD: Patriot Blast 120GB

Problems found:

- Volume slider lags when using AppleALC kext (tried layout id 1,11,99)

- Audio popping / crackling when using Safari, Boom 3D, Logic Pro X, etc.

This happens to all of my output devices, eg. onboard ALC887, USB Audio Interface, USB Mixer...

- When recording in Logic Pro X using USB Audio Interface, there will always be popping noise on the track.

- AirDrop works but Handoff doesn't work (Is it because of Bluetooth connected using internal USB header?)

Thanks a lot! now my volume slider lagging and audio popping problems have gone, and handoff is starting to work (icon now appears on the dock)

Followed this Guide for Mojave and being my first hackintosh, install worked well so far.

The issue i have is for Catalina. Using Clover Configurator - Mount EFI - Mount and Open partition for the EFI partion of disk0s1(which is the attached SSD), unlike the Mojave install, the folder is blank and i am unable to overwrite with the Clover EFI as i did successfully on the Mojave install.

Hey MalDon, como você tá? Rapaz, não sei se houve alguma mudança de configuração do clover do High Sierra pra cá, mas essa imagem pronta do Catalina não funciona pra mim.

Quando mando dar boot no instalador, a tela fica preta, depois aparecem vários +++++ e o PC reinicia.

O hardware é basicamente uma mobo ASUS H81-A, um Xeon E3-1241v3 e uma RX570.

Testei agora com a imagem do High Sierra e dá o mesmo erro. A diferença é que agora pelo menos eu vejo alguma mensagem.

Essa versão do clover provavelmente tá bugada.

Verei se acho alguma imagem mais antiga do High Sierra do olarila.

Finalmente consegui instalar o Catalina. Agora é fazer as configurações de praxe. Aproveitei o DSDT que tu havia feito pra mim pra usar no Mojave, mas parece que ele precisa de alguma alteração pois o áudio não tá funfando (acho que é um ALC889 se não me falha a memória).

Fala Maldon, beleza? Tô há uns 2 dias tentando instalar o Catalina e sempre empaco em algum lugar. Se você, ou alguém que se sentir a vontade quiser me ajudar, ficarei muito agradecido.

Sou novo no mundo do hackintosh então, por favor pode falar o passo-a-passo na resposta?

Minha configuração:

Z270-P Prime ASUS

i7 7700, 32gb de RAM, estou instalando num HD a parte (o Windows está no SSD).

Intel Graphics HD 630 (removi minha placa de vídeo pois sei que ela é incompatível, é uma GTX 1070).

Aqui vai o primeiro problema, minha bios está dando tela preta, mas o computador inicia e boota normalmente, só que não consigo nem com reza braba entrar na bios, já dei um clear CMOS e nada ainda, já consegui reverter algumas vezes (ou seja, consegui entrar na BIOS) excluindo partições EFI que ficaram aqui no sistema, porém depois de um tempo a bios fica sem entrar novamente do nada, já chequei de tudo, já removi o pen drive e mesmo assim não consigo entrar na bios. Ela está como de fábrica, pois tive que resetá-la, logo Launch CSM está ativado e Serial Port também.

Bom, segui todo o tutorial até a parte que deu, passo-a-passo, estritamente. Usei o TransMac para formatar o meu pen-drive para o formato do MAC e o Etcher para queimar a imagem do Olarila Catalina nele, beleza.

Assim que chegou a instalação, cheguei nessa tela, abri o registro de instalação para verificar e travou em ""The Quartz framework's library couldn't be loaded from ....":

Ok, eu consegui instalar agora com o InjectIntel ativado, aliás eu tenho sempre que setar manualmente no options do clover pra conseguir entrar, entrei, beleza. Se que ta tudo muito lento e as cores estão mudadas (ta tudo meio alaranjado?) , Consigo mexer pra lá e pra cá bem lentamente, mas sempre da uma travada geral, em qual programa tenho que abrir e qual kext preciso utilizar pra resolver esse problema? To usando a hd 630 com injectintel forçado no boot, segue foto: obrigadão pela ajuda. No caso o problema é arrumar o vídeo
