I have similar specs and was able to get MacOS to boot using the SSDT method based off Schmocklord's Z590I Vision D after a couple of failed attempts on my part (First time using OC after a 6 year Hackintosh hiatus, what a learning curve...)
But I have been struggling to get everything working, even the I225-V with the pre-11.3 patch documented in Dortania's guide to no avail.
My specs in short:
i9-11900K
GA Z590 Vision D
Sapphire RX 590 connected via Thunderbolt in a Razer Core X (I have RTX 3080 internally for Windows, do you think this something that needs disabling on a per-slot basis in the config? Or will MacOS naturally default to the eGPU?)
32GB Crucial Ballstix 3000MHz
WD SN750 1TB NVMe
Managed to dump my system info, would hugely appreciate a DSDT for this.
